This cut is the T-Bone steak of pork. You get the loin on one side and the tenderloin on the other. Many pork aficianados favor this chop because of it's multiple loin sections and also the qualities the bone gives the meat while it cooks- (of course add in the gnawing factor when no one's looking!)
Sustainably raised on Tim Beeler's farm in Northern Iowa this pork sets the standard for animal husbandry and is right fine eating!
