25 LUSK – Industrial Chic SOMA San Francisco

What do you get when you take a south of Market turn of the 20th Century industrial brick warehouse, a famed architect, and an extremely talented and well traveled chef? You get 25 LUSK, SOMA’s refined industrial chic restaurant and modern lounge.

Chef Matthew Dolan’s expertise in classical technique shows through with subtle notes and refined presentation. We started off with a Coho salmon pastrami, pickled icicle radish, and crème fraiche. First bite and the taste nailed you with pastrami and then the salmon followed with a deep smoky note- an excellent job transforming the fish for sure. The fried Hama Hama Oysters with the housemade piquillo pepper coulis had a Sriracha note that went really well with the crispy oysters and pickled fennel. We were definitely ready for more!

The strudel of natural Cornish game hen with fromage blanc and grilled asparagus had a perfectly crisp phyllo shell that encased delicate and moist confit of young chicken. Complementing this was an avocado mousse that was light and smooth. For a rich dish this was impressively light, not cloying at all. The smoked magret of Artisan duck was expertly paired with a light watercress salad, organic strawberries, black salt and balsamic. What was impressive was not only how the smoke played well with the Moulard breast but also how exceptionally well the breast was sliced and presented. Someone back there has knife skills!

We rounded things out with a flavorful soup that was refined yet had the flavor of bouillabaisse- the fennel and saffron coming through nicely and the garnish of Dungeness crab and chive blossoms was a nice accent. And you can not forget Chef Dolan’s Foie Gras tourchon- rich and buttery with roasted grapes an incredible treat

There was a light lime custard with a kiwi garnish that we enjoyed- just an amuse mind you then dessert! A sampler trio of Dulce de Leche Cheesecake, Coconut Tapioca Parfait, and Rhubarb Napoleon. The only thing missing was a pot of French press coffee, Oh wait no we got that too! Nothing was missing from a really enjoyable evening.

We supply most of Chef Dolan’s meats and poultry and we were so pleased to get to enjoy his craftsmanship in their preparation. Bravo Chef!
